F.LLI GALLONI ACTIVELY INVOLVED IN THE EUROPEAN RESEARCH PROJECT "PRO CURED HAM"





F.lli Galloni Spa is actively involved in the European research project “Pro-Cured Ham”.  This project is supported by the 7th Framework Programme of the European Commission and aims to develop and implement a new system enabling the control of the salting stage during dry-cured ham processing.

The new technology, fast and not invasive, measures the raw material traits and relates them with the absorbed salt amount during salting. This allows to produce different ham with different attributes, each one suitable for a different seasoning. Moreover, it enables the use of less salt quantities to obtain a product with excellent organoleptic and quality performances.
