It is crossed by an underground canal that contributes to create a constant micro-climate whose unique temperature and humidity conditions are ideal for long maturation times and for the natural development of those aromatic yeasts that give the dry-cured hams their unmistakable and incomparable fragrance and character.
‘The “Cantina del Canale” line represents the company’s most refined selection and includes two different maturation stages, of 20 and 24 months, carefully selected by our expert cellar operators.
